Looking for viable options

I'm currently waiting for my dedicated server to go live. I thought I had a solution worked out, but looks like I may have jumped the gun a little bit.

What I'm looking for: I want to host, on one server with 5 IP's, several servers. I want to "containerize" or "virtualize" 5 servers. Two for DNS, one for email, one for nextcloud, and last for misc (e.g. website/vpn/something) and each be assigned their own external IP so they look like 5 different servers to the outside world.

I have ran proxmox before, and it was okay, but I'm limited on space this time, and proxmox was a nightmare to get fully setup and secured, and I want to try something new. I thought I would try docker, but I'm not sure it will do what I want. So I went to /r/docker and I I didn't see any immediate solutions. So without spending a lot of time digging for a possible answer there, I thought I'd ask if anyone knows a good viable solution that I can research to make this happen.
